The Apple – The Queen of Fruits

Apples are South Tyrol’s favorite type of fruits. They are planted by many farmers and in many ways useable. In South Tyrol, more than 7,000 farmers plant the sweet fruit. On the Ritten/Renon as well we find many apple fields where farmers work diligently for months on their growth. During the harvest between August and November, every single apple is picked by hand. There are many different types of apples in South Tyrol: Braeburn, Jonagold, Fuji, Royal Gala, Golden delicius, Gloster, Pinova, Pink Lady, Granny Smith, Elstar, Idared and many more… The apple is known for its high percentage of minerals and contains more than 30 vitamins. It consists of 85% water and hence acts thirst quenching. The round fruit contains hardly any fats or calories and is therefore a healthy snack. Most vitamins are inside the fruit-skin which should definitely be eaten too. The apple is not only in its raw state a treat, but also in many ways useable in the kitchen. There are many culinary delicacies in the South Tyrolean kitchen: Apple strudel, apple cakes, apple risotto, apple dumpling etc. But the apple offers many other products as well: Apple juice, apple sparkling wine, apple liqueur, apple vinegar, apple jelly, apple compote, apple crisps etc. It is even used in cosmetics.
RECIPE: GRANDMA'S APPLE TART

250 gr.butter
220 gr icing sugar
1 vanilla sugar
Lemon peel
5 eggs
330 gr. flour
1 baking powder
1 pck. custard
1 kg shelled, seeded, leafy sliced apples

Lemon glaze:
100 gr icing sugar
2 tablespoons lemon juice


Preparation:
Mix butter with icing sugar and vanilla sugar until it’s creamy. Stir in the eggs one by one. Sift the flour, baking powder and pudding powder over them and fold in. Stir in the apples and lemon zest. Spread the mixture on a greased baking tray.

Bake at 180 degrees for about 30 minutes

For the icing, mix icing sugar with lemon juice and glaze the still hot cake with it.
