Beet „Knödel"

For 4 people
150 g firm white bread
50 g onion, finely chopped
30 g butter
120 g beet, cooked
3 eggs
70 g spicy cheese
1 pinch of caraway seeds
50 g milk
30 g flour
1 tablespoon parsley, finely chopped
salt
pepper
  • Cut the white bread into small cubes.
  • Fry the onion in butter and pour over the bread.
  • Heat the milk with the caraway seeds and strain over the bread.
  • Peel the beet and cut into pieces, puree with the eggs and milk in a blender and add to the bread with the diced cheese.
  • Add the flour and season with salt, pepper and parsley.
  • Mix all the ingredients well and leave to rest for 15 minutes.
Shape the mixture into „Knödel" that are not too large and cook in salted water for about 15 minutes.
They taste very good with sage butter and Parmesan cheese or with a spicy cheese sauce.
Serve with steamed white cabbage.
